Welcome/Bienvenidos to Maiz y Cal! I created this blog to share the wonderful cuisine of Mexico. Together we will explore the different regions of Mexico and cook dishes from each of these. We’ll see how the cuisine varies from region to region, learn about the different ingredients, cooking styles, and techniques, and explore how Mexican flavors can be used in new and different ways. We’ll cook traditional Mexican dishes, modern twists on Mexican favorites, and dishes from around the world made with Mexican flavors and ingredients.
